The Ferment


I always have Kombucha for sale because I constantly have multiple small batches made back to back. The flavor will change depending on my mood, the season, or customer requests. If you have a good flavor idea--let me know! I like mixing things up! Common flavors include lemon-ginger, apple, grapefruit, or melon (if it's the summer). 

Kombucha is sold in 12oz or 750ml bottles. I try to re-use glass bottles whenever possible.

Ingredients: Organic Sugar, Organic Black or Green Tea, Organic Freshly-Squeezed Juice.

I always have a variety of pickles based on the season and what's fresh in the market. I'm also a huge believer in a 'no waste' policy, so I'll always look for ways to salvage what no one else wants. This means if I see something in the market that isn't getting enough love (maybe the produce will be discounted because a harmless bruise), I'm going to take it home to ferment or quick pickle! 

Because of the amount of time and labor (and space!) it takes to make small batch pickles, I have limited quantities of each variety. I apologize in advance if I am ever out of stock!

Kimchi Radishes $9.00

Ingredients: Organic Radishes, Organic Onion, Organic Garlic, 
Organic Ginger, Organic Lemongrass, 
Fish sauce, Organic Chili Peppers, Sea Salt.

These pickles are extremely savory and have a delicious fermented effervescence that leaves a mark on the tastebuds. Only slightly spicy, but not at all lacking in the umami flavor. Use them on rice dishes to add an acidic punch! Get them before they run out!

Classic Sauerkraut $8.00

Ingredients: Organic Green Cabbage, Sea Salt, Garlic, Organic 
Spices (All Spice Berries, Mustard Seeds, Caraway Seeds, 
Dill Seeds, Fennel Seeds).

Traditional kraut using all of the traditional herbs and spices. Lots of allspice, clove, fennel, caraway, and rye. Great, of course paired with pastrami wedged between slices of rye bread. Or just alone too!

Vietnamese Pickles $6.50
Do Chua 

Ingredients: Organic Daikon Radish, Organic 
Carrot, Garlic, Chili Pepper, Distilled 
Vinegar, Organic Sugar, Sea Salt. 

These quick pickles are inspired by the traditional Vietnamese garnish I have come to love so much. They are both tart and slightly sweet, with only a hint of chili.  Use them as a topping to add a savory bite to any dish!

Root Veggie Relish $7.00

Ingredients: Turnip, Carrot, Radish (Spanish 
Black, Red Daikon and/or 
Watermelon), Onion, Red JalapeƱo, 
Mustard Seed, Fennel Seed, Salt,
 Sugar, Vinegar. 

Both sweet and tangy, this colorful relish is a great substitute for the traditional counterpart. It would make a fantastic addition to your sandwiches, cheese plates, and even a salad. 

Sweet Daikon $6.50

Ingredients: Daikon Radish, 
Sugar, Distilled Vinegar, Sea Salt, 
Turmeric (for color). 

Unlike the daikon in Vietnamese Pickles, Takuan is significantly more sweet, but still has a slight acidic sharpness. This particular recipe is one of my "quick pickle" versions. Great to snack on alone because of the more mild flavor and sugar content.
